Cannoli Cups

O algo así.....
Or something like that...

¿Cómo os ha ido el fin de semana?
Nosotros con el horno encendido para enseñaros nuestros.....
¡Cannoli Cups!
(o "El postre inspirado en los Cannolo sicilianos")



Si, si, habéis escuchado bien, inspirado, por que como nos escuche llamarles Cannoli un italiano, nos da una paliza, jejejejeje.

Vamos a aclararos por que no se parecen a los de verdad. 
Los Cannoli de verdad son canutillos, unos tubos de masa frita. Bien, pues los nuestros son unos cestitos y no hemos freído la masa, la hemos horneado, que nos parecía más sano (jajajajaja).


La masa original está hecha con vino Marsala, la nuestra no, la nuestra lleva ¡vinagre! Ahora es cuando echo de menos el emoji con cara de sorprendido y las manos en la cabeza.

El relleno típico de los Cannoli está hecho con queso ricotta. Nuestro relleno está hecho con queso en crema, siiiii el Philadel**** de toda la vida, por que el ricotta es complicado de encontrar y el sustituto directo que es el requesón, no nos convencía para que quedase cremoso.


Después de estas aclaraciones podéis ver que no se parecen mucho a los tradicionales, de ahí que sean una inspiración.


No es por echarnos flores, pero... es que... nuestra adaptación está im-presionante (solo algunos entenderéis esto). Pero vamos a dejarnos de rollos y vamos a por la receta.

Cannoli Cups
by It's So Cookie!

Ingredientes para la masa:

     · 500gr de harina
     · 100gr de mantequilla
     · 3 cucharadas de azúcar blanco
     . 1/4 cucharadita de sal
     · 1 cucharadita de canela
     · 60ml de agua
     · 60ml de vinagre
     · 2 huevos

Ingredientes para la crema de relleno:

     · 40gr de Maizena, harina de maíz refinada
     · 250ml + 80ml de leche entera
     · 70gr de azúcar glacé
     · 1 cucharadita esencia vainilla
     · 400gr de queso de untar (son dos paquetes del "de toda la vida")

Elaboración:

     1.- Juntamos en un bowl grande la harina, el azúcar, la sal, la canela y la mantequilla cortada en cubitos pequeños. Con las manos, vamos mezclando hasta que nos quede una textura arenosa, no tan suave como la harina en si.

     2.- En un cuenco, mezclamos 250ml de leche con la Maizena, hasta disolverla bien. Lo dejamos reposar 20 minutos.

     3.- En otro cuenco batimos el agua, vinagre y los dos huevos. Una vez bien mezclados vamos poco a poco integrándolos con la mezcla del bowl grande hasta hacer una masa que finalmente amasaremos unos 5 a 7 minutos sobre una superficie ligeramente enharinada. Bendita suerte tendréis a los que nos se os haya estropeado la amasadora, ya que simplemente debéis volcar la mezcla "arenosa" e ir vaciando la mezcla "liquida" a velocidad lenta. Finalmente 5 minutos a velocidad media.

     4.- Envolvemos la masa en film transparente y la dejamos reposar en la nevera una hora aproximadamente.

     5.- Mientras ponemos la mezcla de Maizena en un cazo a fuego medio, y sin dejar de remover, añadimos el azúcar y el resto de leche. Lo llevamos hasta que espese mucho, que quede bien integrado y cremoso, sin dejar de remover. Más o menos unos 10 minutos.

     6.- Lo tapamos con un film transparente en contacto con la superficie y dejamos enfriar.

     7.- Horneamos los cestitos. Para eso estiramos la masa hasta que quede finita, unos 3 milímetros, y cortamos cuadrados de 12cm de lado. Los ponemos en una bandeja de cupcakes y los horneamos a 180ºC entre 12 y 15 minutos.

     8.- Una vez enfriada la mezcla de Maizena, la batimos con las varillas para mezclar el queso de untar y la esencia de vainilla hasta que quede todo bien integrado y cremoso, como el aspecto de la nata montada.

     9.- Finalmente, con los cestitos bien frios, los rellenamos con la crema y los espolvoreamos con azúcar glacé y/o cacao.

Yes, yes, you heard right, inspired.

Let's make clear that not resemble the truth. The beads are really Cannoli, fried dough tubes. Well, ours are little baskets and have not fried the dough, we baked it, so, we looked healthier (hahaha).



The original batter is made with Marsala wine, not ours, ours takes vinegar! Now is when I miss the emoji with surprised face and hands to the head.
The typical Cannoli filling is made with ricotta cheese. Our filling is made with cream cheese, because the ricotta one is difficult to find and direct substitute, requesón here in Spain, is not convinced us that it was as creamy as ricotta.

After these clarifications you can see that there are so different from traditional Cannoli, hence our Cannoli Cups are an inspiration.

It's not to boast, but ... is that ... our adaptation is im-pressive.

Cannoli Cups
by It's So Cookie!

Ingredients for the batter:

     · 4 cups all-porpouse flour
     · 1/2 cup butter
     · 3 tablespoons white sugar
     . 1/4 teaspoon salt
     · 1 teaspoon cinnamon
     · 1/4 cup water
     · 1/4 cup white vinegar
     · 2 eggs

Ingredients for the filling cream:

     · 1/4 cup cornstarch
     · 1 cup + 1/3 cup whole milk
     · 1/2 cup icing sugar
     · 1 teaspoon vanilla scent
     · 400g cream cheese 

Preparation:

     1. - We gathered in a large bowl the flour, sugar, salt, cinnamon and butter cut into small cubes. With your hands, let mix until a sandy texture is, not as soft as flour itself.

     2. - In a bowl, mix milk with cornstarch, until dissolved well. Let stand 20 minutes.

     3. - In another bowl beat the water, vinegar and two eggs. Once well mixed gradually we are integrating them with large bowl mix to make a dough that eventually we will knead for 5-7 minutes on a lightly floured surface. Blessed luck we'll have to be the mixer hath spoiled because you simply must dump the mixture and go pouring the liquid mixture at slow speed. Finally 5 minutes at medium speed.

     4. - We wrap the dough in plastic and let rest in the fridge for about an hour.

     5. - As we put the cornstarch mixture in a saucepan over medium heat, always stirring, add the sugar and the remaining milk. We took him until thickened much, it is well integrated and creamy, stirring constantly. More or less 10 minutes.

     6. - Then, cover with film in contact with the surface and let it cool.

     7. - Bake the cups. For that stretch the dough until it is very thin, about 3 mm, and cut squares about 12cm side. We put them in a tray of cupcakes and bake at 350°F for 12 to 15 minutes.

     8. - Once cornstarch mixture is room temperature, beat it with cream cheese and vanilla scent until it is all well integrated and creamy, like whipped cream look.

     9. - Finally, with all cups cold enough, fill them and sprinkle with powdered sugar and / or cocoa.

¡Cookies en un Bote! · Cookies in a Jar!

¿Os acordáis de las Cookies que salían en la foto de la entrada anterior? 
¿Las de la fiesta "It's So Cookie!"?
Pues si, son estas, las más ricas que hemos probado hasta ahora.



Además algo muy chulo de esta receta es el formato en el que os la presentamos. Se trata de meter, capa a capa, todos los ingredientes en un bote.
De esta manera se convierte en un regalo super chulo para llevar a la típica cena que nos invitan, en navidad a modo de detalle, o en una fiesta como recuerdo, eso sí ese caso en un tamaño más pequeño, ahora entenderéis por que...


De esta receta obtendremos aproximadamente, y esto ya depende del gusto de cada uno, entre 25 y 30 Cookies.
La elaboración no podía ser más sencilla, vacía todo el bote en un cuenco bien grande, añade un huevo batido y 100gr de mantequilla a temperatura ambiente, o ablandada en el microondas, mezclar y hornear.
Pero bueno, vamos a ir paso a paso explicando tooooodos los detalles de como se prepara todo, desde la compra del bote, hasta el momento de degustarlas. Ains, como las echamos de menos (si, ¡nos las hemos comido todas en un par de días!)

El primer paso es seleccionar el bote. Nosotros hemos usado el Quattro Stagioni de Bormioli. La verdad es que queríamos el típico mason jar de Ball, pero es que aquí no hay quien los encuentre. Una pena por que tienen un diseño genial.
El bote es de cristal, con tapa metálica, y muy importante tiene que ser de 1 litro de capacidad.



Si el bote es más pequeño no os entrará todo y si el bote es más grande os quedará hueco y se moverán los ingredientes.

Una vez que ya tenemos el bote llega la hora de ir poniendo los ingredientes en él. Para eso os lo vamos a ir separando capa por capa y de paso os indicamos también las cantidades de cada cosa que debéis poner. La receta es una adaptación de la de Bakerella.
Vamos allá con las capas desde la base:


Harina de la normal. Hemos utilizado copos de avena de los que se usan para desayunar con leche fría, aunque se pueden utilizar de los que se cocinan. Y por último hemos usado M&Ms de los de cacahuete, aunque también valen los que solo tienen chocolate, o los Lacasitos de toda la vida.

Es importante que las nueces lleguen bien arriba para que la tapa haga un poquito de presión y así nos aseguramos que no se va a mover nada.

Como podéis ver en la tapa nosotros le hemos puesto un papel de estraza atado con una cuerda de sisal. Hemos aprovechado, y por la vuelta del papel, hemos puesto lo que hay que usar para la receta y las indicaciones de temperatura y tiempo. Siiiii, ya sabemos, ahora os lo contamos a vosotros, jejejejeje.





En la cuerda veis que hay una ampolla amarilla, esto es el aroma de vainilla, y es exactamente la medida que debéis echar, una cucharadita. Es de la marca 
Dr. Oetker y viene en paquetes de cuatro ampollas.

Hemos usado también un par de Toppers para decorar el papel de estraza y para pegar la cuerda al bote.

Ahora vamos con la preparación de estas maravillosisisísimas Cookies:

   1º.- Precalentamos el horno a 180ºC y sacamos la bandeja.

   2º.- Colocamos sobre la bandeja papel de horno, o si tenéis, bandeja antiadherente o tapete de horno.

   3º.- Vaciamos el bote en un cuenco grande, le añadimos el huevo batido, la mantequilla ablandada y la esencia de vainilla. Lo mezclamos todo con una cuchara o espátula y, cuando veáis que todo esta integrado en una "gran" bola, acabáis amasándolo a mano.

   4º.- Hacemos bolas de unos 3 o 4 cm de diámetro y las ponemos bien separadas en la bandeja. Esto es para que no se nos acaben uniendo unas con otras y nos salga al final una Cookie gigante (ñam, ñam).

   5º.- Las horneamos entre 12 y 15 minutos y sacamos. Os recomiendo que les echéis un ojo desde el minuto 10 ya que el tiempo varía mucho en función del horno y los "blanquitas" o "doraditas" son dos equipos diferentes, debéis decidir a cual pertenecéis. ;-)

   6º.- Por último, dejamos que se templen en la misma bandeja del horno y acabamos de enfriar en una rejilla. Muy importante que no las manipuléis hasta que no se templen, si no, se romperán. También os recomendamos que dejéis enfriar la bandeja entre una hornada y otra, así no se os tostarán de más por abajo.

Do you remember the cookies on the photos of the "It's So Cookie!" Party?
So yeah, are these, the richest we've tested so far.



Also, something really cool about this recipe is the format in which it is presented. It is put, layer by layer, all the ingredients in a jar.
In this way it becomes a super duper gift to carry on the typical dinner friends invite us, for Christmas as a detail, or at a party as a favor, though that in this case you must choose a smaller size, now you will understand that .. .

This recipe will get approximately, and it just depends on the taste of each, between 25 and 30 Cookies.
The preparation could not be simpler, empty the jar into a rather large bowl, add a beaten egg and 100g (1/2 cup) softened butter or softened in the microwave, mix and bake.
But hey, let's go step by step explaining all details about how to prepare everything from the purchase of the jar, until you taste them. Ains, as we miss (yes, we have eaten all in a couple of days!)

The first step is to select the jar. We have used the Quattro Stagioni by Bormioli.  The truth is that we wanted the typical mason jar by Ball, but here no one can find them. A shame, because they have a great design.
The jar is made of glass with metal lid, and very important has to be 1 liter (1 quart for US readers).
If jar is smaller do not come around and if jar is greater will be hollow and the ingredients will move.

Once we have the jar comes time to be putting in the ingredients. For that you're going to go layer by layer separating step and we will also indicate you the amounts of each thing you should put on. The recipe is adapted from Bakerella one.
Here we go with the layers from the base:

First layer:
1 1/3 cup all purpose flour + 1 teaspoon baking powder + 1 teaspoon baking soda + 1 pinch salt

Second layer:
1 cup oats

Third layer:
3/4 cup M&Ms

Fourth layer:
3/4 chocolate chips

Fifth layer:
1/2 cup brown sugar

Sixth layer:
1/2 cup white sugar

Seventh layer:
Nuts till top of the jar

It is important that the nuts come right up to the top to make a little bit of pressure and so we make sure that is not going to move anything.

As you can see at the top we will have put a piece of kraft paper tied with sisal rope. We have taken, and by the turn of the paper, we have written what you need to use for the recipe and instructions for temperature and time. Yeeeeeah, we know, now I have to you, hehehehe.

In the rope you see that there is a yellow bulb, this is the vanilla's scent, and is exactly as you should take a teaspoon. Is brand
Dr. Oetker and comes in blister packs of four.

We also used a couple of Toppers to decorate kraft paper and glue the rope to the jar.

Now for the preparation of these super super wonderful Cookies:


   1. - Preheat oven to 180 °C (350ºF) and took the tray.

   2. - Put on baking paper on tray, or if you have, a nonstick pan or a baking mat.

   3. - Emptied the jar into a large bowl, we add the beaten egg, softened butter and vanilla scent. Mix everything with a spoon or spatula and, when you see that everything is integrated in a "big" ball, you finish kneading by hand.

   4. - Make balls about 3 or 4 cm (1 1/2 inches aprox.) in diameter and put them in the tray well separated. This is so that we end up not joining each other and we get it in the end a giant cookie (yum, yum).

   5. - Bake 12 to 15 minutes and took. I recommend them to take a look from the 10th minute as the time varies greatly depending on the oven and the "white boys" or "browned" are two different teams, you must decide which you belong. ;-)

   6. - Finally, we let to warm up in the same tray from the oven and just cool on wire rack. Very important not to touch Cookies until it hardened and tempered, if not break. I also recommend that you let cool between a baking tray and another, so no more will roast you below.

It's So Cookie! Party

Bueno, pues aquí están. En la siguiente línea tenéis el link de descarga para montar toda la fiesta It's So Cookie!


Este imprimible está todo en color marrón con un fondo beige. El fondo tiene un poco de textura, como unas pequeñas motas que le dan un toque más rústico o antiguo. Os recomiendo que todo lo que utilicéis sea en estos tonos u otros tonos neutros similares.

Como ya os habíamos contado en la entrada anterior consta de un montón de cosas que ahora os iremos enseñando, y contando algún detallito que otro. El diseño está en color, con lo que podéis imprimir todo perfectamente en papel, a partir de 150gr para que tenga consistencia, o cartulina. También podéis optar por imprimirlo en un papel sencillo y pegar este sobre una cartulina de color antes de recortarlo.

Todos los archivos son Jpeg y están en formato A4, salvo la Cajita Mi Merienda que está en formato A3.

En las fotos vais a ver unas cookies y unos cupcakes, que haaaaambre. En próximas entradas os contaremos las recetas de estos dos. 
Os va a encantar la idea de las cookies, ya veréis.


Para la decoración lo ideal es usar tejidos naturales para los manteles, algodones sin blanquear o lino, papeles con textura, como el papel de estraza que pusimos a modo de fondo, cuerda o cintas, de sisal o yute, y puedes acompañar todo con gramíneas secas, espigas de trigo por ejemplo.

Los banderines vienen en tres archivos y son 5 diseños diferentes. Aparecen por duplicado salvo el banderín central, este que se ve con más detalle. Son banderines de tamaño estándar, como los típicos de colores o banderas que se encuentran en las tiendas. Podéis reducir el tamaño si queréis una guirnalda más compacta.
Nosotros los hemos unido haciéndoles unos taladros por el que hemos pasado una cuerda de sisal, pero podría haber sido perfectamente pegándolos o haciendo una doblez sobre la cuerda.



En la siguiente foto podéis ver las cajitas para palomitas y en la otra las etiquetas de las botellas de refresco, en este caso hemos usado leche que nos pegaba mejor con las galletas y los cupcakes, ñam ñam.
Las etiquetas os aconsejamos que las imprimáis en papel y no en cartulina. Esto es por que así se amoldan mejor alrededor de la botella.




En la foto anterior, y en esta de abajo, podéis ver la cajita Mi Merienda. Esta es la que al comienzo de la entrada os comentábamos que estaba en formato A3. Es la más grande de todas y es donde podéis poner un cupcake y unas galletas, o una pulguita, junto con una servilleta.



 Las siguientes son las cajitas de las chuches, en las que también podéis incluir el típico detalle de fiesta (confeti, serpentinas, sombreritos, collares, bigotes...) o una pegatina con un lápiz pequeñito, tipo Ikea, para que se identifiquen.
Hay dos modelos. Uno con forma de cubo y el otro con un cierre de cruce.



Y por último ha llegado el momento cupcake. Yummy!!!
Para eso os hemos colgado dos diseños de Wrappers que podéis adaptar, recortando más o dejándolos tal cual, a mini cupcakes, cupcakes normales o a los gigantes. (No tenemos el icono de boca salivando ;))
Los bordes de arriba los hemos recortado con una tijeras especiales que hacen formas, estas personalmente las hemos comprado en Tiger Stores.


También hemos incluido tres diseños diferentes de Toppers que podéis utilizar de un sin fin de formas, en los cupcakes (como el la foto), como confeti o incluso a modo de cierre de las cajitas.
Otra idea chula es hacer etiquetas para poner a la gente de la fiesta.




Esperamos que os haya gustado. Nosotros nos lo hemos pasado genial haciéndolo todo (¡sobre todo comiéndonoslo!, jejejeje)

This printable is all in brown with a beige background. The fund has a bit of texture, like a small flecks that give it a rustic or antique look. I recommend you to use everything in these shades or other similar neutral tones.

As we told you in the previous post, printable, has a lot of things. The design is in color, so you can print everything perfectly on paper, from 150gr for consistency, or cardboard. You can also choose to print on plain paper and paste on a color cardboard before cutting.

All files are Jpeg and are in A4, except My Snack Box which is in A3 format.

In the photos you are going to see a few cookies and cupcakes, taaaaaasty. In future posts you will have the recipes of these two.
You'll love the idea of ​​cookies, you'll see.

For decoration, ideally use natural fabrics for tablecloths, unbleached cotton or linen, textured papers, as we put brown paper as a background, rope or tape, sisal or jute, and can accompany all with dry grasses as wheat spikes for example.

The flags come in three files and are 5 different designs. Appear in duplicate except central pennant. Pennants are standard size as typical colors or flags that are in stores. You can reduce the size if you want a more compact streamer.
We've teamed making bores for which we spent a sisal rope, but could have been perfectly pasting them or making a bend over the string.

Popcorn boxes and labels of soda bottles, in this case we used milk, better with cookies and cupcakes, yum.
The labels we suggest that impress them upon normal paper, not cardboard. This is so better to conform around the bottle.

My Snack Box. This is what in the beginning of the post I mentioned that It was in A3 format. It is the largest of all, and is where you can put a cupcake and cookies, or a sandwich along, with a napkin.

 The following are the Sweets Boxes, which also can include the typical party detail (confetti, streamers, little hats, collars, mustaches ...) or a sticker with a tiny pencil, Ikea type, to be identified.
There are two models. One cube-shaped and the other with a crossover closure.

And finally it is cupcake time. Yummy!
For this reason I've posted two wrapper designs that you can , cutting more or leaving as is, to mini cupcakes, regular cupcakes or giant ones. (We have no mouth salivating icon ;))
The top edges of the've cut with special scissors that make forms, these have personally bought Tiger Stores.

We have also included three different designs for Toppers that you can use in cupcakes (as pictured), like confetti or even as a closure of the boxes.
Another idea is to make stickers to put on people at the party.

We hope you enjoyed it. We've had great doing it all (mostly eating it!, Hehehehe)
